Rosemary Infused Grapefruit and Kale Salad to make your winter day colourful

Outside is grey  and windy , we can't do a lot about that ..but we can bring a little bit of colour to us in other forms.
We can play with colours of our clothes,light in the house and …food !
Vegetables and fruit can give us not only health and balance but a bit of happiness.
I love this salad not only for its great taste and vitamins  boost but as well for the colours , only looking at the bowl can make us very happy .

My chooise for this week :

Rosemary Infused Grapefruit and Kale Salad (it's looking beautifull and tasting even better )

INGREDIENTS

1 bunch of lacinto kale, shredded (about 4-6 cups)
1 cup red cabbage, shredded
1/2 of a red grapefruit, cut in small pieces
2 tablespoons hemp hearts
2 tablespoons raw sunflower seeds
1 tablespoon fresh rosemary, chopped (1-2 sprigs)

ROSEMARY CITRUS DRESSING
1 lime, juiced
1/2 lemon, juiced
1 clove garlic, minced
2 tablespoons olive oil
1 tablespoon fresh rosemary, chopped
1 teaspoon apple cider vinegar
1/2 teaspoon fine sea salt
1/2 teaspoon coconut sugar (or sugar of choice)
1/4 teaspoon black pepper

INSTRUCTIONS

Assemble all ingredients for the salad in a bowl, starting with the kale, cabbage, grapefruit, hemp hearts, sunflower seeds and rosemary. Mix together.
In a small bowl, whisk together all the ingredients for the salad dressing. Pour over salad and toss.
